The Chalossais raise and prepare their geese and ducks in the traditional way, from which they make world-famous foie gras and confit. They have the most fertile and delicious vegetable gardens, and, according to them, their beef is the best. The Marensinois, beyond its immense forest rich in game, fish, and mushrooms, has the most beautiful window onto the Atlantic, from which they draw seafood. Its sandy soils provide them with incomparable asparagus, and they know how to tenderly tend the vines that give them the wine of the sands. In the airials, the yellow chicken runs free.
The Landais has proven itself worthy of this abundance by devoting care to the preparation of its products to the height of their quality and diversity (even the Armagnac, which grows its still horn in its land). Not being a "binge-eater" but a true gourmet, it has developed over the generations a culinary know-how based on respect for the flavors of nature, know-how that it likes to share because its conviviality is not an empty word. This is why every family event is marked by a meal with a carefully composed menu, and every major event, rugby match or bullfighting festival, is doubled by gastronomic jousts to which visitors and passers-by are cordially invited.
I therefore raise my glass of Chalosse wine to all those who appreciate our Landes gastronomy and invite them to come and join us in our little paradise to take part in our ferias and share our joy of living.
